TOMATO AND OLIVE SALAD

Ingredients 250g tomatoes, preferably vine ripened 1 ½ teaspoons Maldon Salt 3 tablespoons extra virgin olive oil A bag of wild rocket leaves (or a handful fresh basil leaves) About 12 pitted black olives, halved Freshly ground Maldon black pepper
If you sprinkle sliced tomatoes with some Maldon Salt and leave them for a while they give off some delicious juices. These can then be drained and whisked with olive oil for a lovely Italian-style dressing full of flavour without the sharpness of vinegar. It is a classic chef’s technique known as ‘degorging’ and works well with cucumbers also. Serves 4-6 Instructions Slice the tomatoes and place on a plate crushing a teaspoon of Maldon Salt in between. Leave for about an hour until natural juices seep out. Strain these into a small jug or cup. Add the olive oil and some Maldon black pepper to taste then whisk together for a dressing. Line a platter or shallow bowl with some rocket leaves and top with the tomatoes. Scatter over the olives and drizzle with the dressing. (Alternatively, omit the rocket and sprinkle the tomatoes with some hand shredded basil leaves). Chill for ½ hour then serve sprinkled with remaining half a teaspoon of Maldon Salt.
